The North Carolina Sweet Potato Commission (Yes, there really is such an organization!) has compiled a free booklet to provide you with an array of new ideas on how use sweet potatoes in more of your dishes.

If you or your family tires of eating sweet potatoes the same way again and again, then you just found a gem. Personally, I love sweet potatoes, but haven’t really ever used them much other than the holiday season. I’ll be glad to get my booklet because we are always being given bags of sweet potatoes, and unfortunately, so many times they end up going bad and being thrown out in the trash.

North Carolina provides the bulk of sweet potatoes in United States, so it makes sense that they have such an organization, and that they would invest in preparing these free booklets. They grow over 600 million pounds every single year!
